Most activities surround water sports in the nearby region. You have the largest salt water coastal lake in Australia, great for fishing, skiing, sailing etc. at your feet. There are Jet boat rides (at Pelican), cruises etc. There are a number of beautiful spots right around the foreshore of the lake. Sandy areas down towards Swansea, and more grassy areas on the North Western side.
You then have probably the best beaches in Australia (some say the world) within 15 minutes drive that stretch for kilometres north and south. The sand from these beaches are exported to places like Hawaii. There are a number of beaches to choose from. Redhead beach is the closest, further South is Caves beach (with a couple of small caves for the kids to explore), then some long beaches within the National Park. Towards Newcastle there is Merewether beach and Newcastle beach itself and of course Nobbys beach where the Pascha Bulka (ship) got stranded. This is also the entry to Newcastle Harbour and there are Hotels and clubs nearby.
Lambton Pool is a cheap day out with the Kids. It has a water slide and diving platform. There are Go Karts and Putt Putt golf near there, next to the Knights Stadium at Broadmeadow. There are also Go Karts at Cameron Park. There is " Tree Top adventure park" with flying foxes and suspension bridge courses etc. (more for adults) at Minmi, about 20 minute drive (near Cameron Park).
About an hour inland are the Hunter Valley winery's, and you can take tours to those by various modes of transport (Harley Davidson bikes, buses etc).
They also have live bands, but you probably need to book.
Warners Bay foreshore usually have a live band every Friday afternoon in summer, there is quite a bit of activity down there during holiday periods. Small rides for the kids etc. You can see that from the unit and it is a comfortable walk. In the opposite direction there is Speers Point park, which is a much larger park with a good (free) amusement park for the kids and a public swimming pool nearby. It is a short drive or a nice long walk around the concrete path at Lake Level. There is an entry to the path at the next street from the unit towards Speers Point (Ryan Street). There is a nice Pub for lunch on the foreshore on the way called Pippys Hotel.
For more nightlife, you are best to go into the "Honeysuckle" strip in Newcastle (about 20 minutes by taxi). There are a number of bars and it is a beautiful outlook over the Harbour. There are also other night spots at Beaumont Street Hamilton and Newcastle.
