Originally built in 1935, what began as a guest house and country pub, has evolved into a romantically elegant, boutique hotel. Peppers Mineral Springs Hotel is particularly unique for its diversity of accommodation. There are four types of rooms across the property; Springs Rooms, Garden Rooms, Garden Spa Villas and Villa Parma.
In the main hotel, located on the upper floor of the original building, there are four different style rooms: Springs Classic, Springs Spa, Springs Deluxe Spa and the Terrace Room. Finished in modern decor, these heritage rooms also echo the past with original character features such as sash windows and Art Deco lamps. Many of the rooms have antique fireplaces, balconies and romantic two person spa baths.
Tucked away in privacy behind the Hotel, are the Garden Classic, Garden Spa and Garden Deluxe Spa rooms. Spacious interiors provide a sense of warmth and vibrancy, with extra-comfortable beds, modern cane lounge chairs, original art work and custom designed lighting. All Garden Rooms have their own private terrace, with the Garden Spa rooms featuring private 2 person spa baths on an outside deck, and the Garden Deluxe Spa rooms featuring a luxurious 2 person spa bath in the room.
The Garden Spa Villas are spacious, apartment style accommodations over two levels, with modern appliances, flat screen TV and a large 2 person spa bath. Enjoy tree-top views from the private balcony or curl up in front of the gas fire.
The Argus Dining Room
Experience the finest produce of Daylesford & the Macedon Ranges, including ingredients picked fresh from our own Argus kitchen garden and nearby farm ‘Vale Hill’, expertly woven into imaginative dishes by our Executive Chef and his team.
The Argus Dining Room serves stunning Modern Australian cuisine with an emphasis on fresh, clean flavours and regional produce. Guests can enjoy a varied seasonal menu in understated but sophisticated surroundings designed by interior designer Stuart Rattle.
Utilising food grown onsite in our Argus Kitchen Garden, the menu is also complemented by rare breed beef and lamb from the hotel’s farm ‘Vale Hill’ in Smeaton.
Our extensive wine selection, handpicked by sommelier Jeremy Shiell features boutique wines from small-scale, family owned farms and growers expressing wine of terroir with minimal interventions or additions.
