It lies halfway between the town of Herencia, in the north-west of the province of Ciudad Real, some 150 km from Madrid and 5 km from the border separating the provinces of Toledo and Villarta.

The recently created Cheese Factory is concentrating on combining artisanal tradition with the latest technology. It intends to gain status as a point of reference both regionally and nationally. Its name, which is the date of publication of El Quijote, pays homage to the cheese-making tradition of this region, to which there are many references in Cervantes’ great Spanish work. Furnished with the latest technology, the cheeses made here are guaranteed to be of a high quality. The sheep’s milk from La Mancha flocks, pasteurized or unpasteurized, is obtained according to the very strictest hygiene regulations.
